Lauren’s Lemon Creamsicles
Lauren’s Lemon Creamsicles 1 cup freshly squeezed lemon juice 1 can coconut milk (not light) 1 cup heavy cream 1 teaspoon vanilla 1/8 cup liquid stevia (or sweetener of your choice) 2 scoops vanilla protein powder (no added sugar) Blend all ingredients in blender (I use an immersion blender) until smooth.
Pour into molds and freeze for at least 5 hours Makes 8 4 oz popsicles
Notes: This was my first experiment with lemon creamsicles and J found them to be a bit on the tart side. I will probably add more sweetener next time.
